For Portugal we made Carne Cuisada- Portugese Beef stew AND something specially for Lil Mermaid too :D
For the stew I took
1 medium onion, chopped
4 cloves of garlic, minced
500 g of stewing beef
1/2 of chorico sausage
3 large chopped carrots
1 cup of peas
1 cup of corn
4 large potatoes cut into cubes
We cooked the onion and garlic in a large pot with a little bit of oil for a few minutes, added chorico and continued cooking. Then we added the meat and cooked until it started to brown. We now added some salt and pepper and some water to cover the meat and cooked until tender. Finally we added carrots and potatoes.. cooked for a few minutes before adding peas and corn.
The stew is so easy to make and tastes absolutely beautiful. Lil Mermaid helped me to peel and cut the veggies but she couldn`t wait to start making her treat :)
And here it is:
I found the recipe from Tia Maria`s and as soon as Lil Mermaid saw it she wanted to make it. And she made it all by herself.
All you need is 4 eggs, 4 tbs of flour, 4 tbsp of sugar and 1 tsp of baking powder
To make the dough she separated 4 eggs from the yolks and whites- this was the best part of making the cake as it was so much fun!
In a large bowl she whisked the egg yolks with 2 tbs of sugar until lemony, added flour and continued whisking, for about 5 min.
In a separate bowl she whisked the egg whites until they formed soft peaks, added another 2 tbsp of sugar and continued whisking until stiff peaks formed.
She now folded the egg whites into the eggs yolks very gently with a rubber spatula.
She poured the dough into the pan lined with parchment paper spreading evenly. She cooked for about 10 min until light brown.
I helped her to flip the cake from the pan onto the clean kitchen towel and peeled off the parchment paper as she is not yet sure about using a hot stove and pans.
We rolled up the cake with a tea towel and let it cool for a little bit before unwrapping it and spreading the Nutella over it. Now she rolled the cake again but without the tea towel this time.
Easy- peasy and very tasty! Yum!
