Around the World in 12 Dishes- Jamaica


This time we stopped in Jamaica on our way “Around the World in 12 Dishes”. As we all love chicken we decided to make a dish using chicken. And here is our choice:

Coconut Chicken

4 skinless, boneless chicken breasts,

1 teaspoon vegetable oil,

2 onions, chopped,

1 red  pepper, chopped,

1 green pepper, chopped,

2  garlic gloves,

1 tin coconut milk,

salt and pepper to taste,

 pinch of crushed red pepper flakes

This is what you need to do:

Preheat oven to 425 degrees F (220 degrees C). Fry chicken  breast in a large frying pan in vegetable oil until the chicken just begins to brown. Stir onions, green  peppers and red  peppers with the chicken. Cook  until the onions are translucent. When the vegetables are translucent, stir in the garlic and coconut milk.Let the mixture cook 5 to 8 minutes before removing the pan  from the heat. Season with salt, pepper, and red pepper flakes. Transfer the mixture to a baking dish and bake in a 425 degrees F (220 degrees C) oven for 45 minutes, or until the vegetables cook down and the chicken is tender.

This dish is really easy to make  and tastes good. We all enjoyed it. Lil Mermaid helped me in chopping the veggies as usual.  This time she created a new way of chopping an onion, as you can see on the photo   :)

We also printed out  the Jamaican passport pages and placemat to colour in.
