We are on our way around the world again and this time we landed in New Zealand.
When searching for recipes I sometimes end up with ones that I know my lil picky eater wouldn`t eat anyway.. but as she loves helping me in the kitchen we still spend some useful time together, because whilst cooking she often tries some new ingredients. But this time I found a prefect recipe that the whole family enjoyed. I needed something easy and non expensive.. so here it is:
Potato and Bacon Bake
All you need is:
6 garlic gloves
1 tsp salt
cheese, grated- 100 g
2kg potatoes, peeled and thinly sliced
1 tbsp- olive oil
4 eggs, beaten
4 pieces bakon, finely diced
And here is what you do:
Preheat the oven to 190°C. Mix the eggs, milk, garlic, salt, bacon and 3 tbsp chopped chives. Reserve. Oil a 20 cm square ovenproof dish.
Layer one third of potatoes evenly into the dish and pour over one third of the egg mixture then repeat with the remaining two-thirds of the potatoes and egg mixture.
Sprinkle the cheese evenly on top.
Cover loosely with foil and place in the oven for about 45 minutes.
Uncover and bake a further 15 minutes until the potatoes are tender and everything is bubbling and golden.
Remove from the oven and serve as a side with roast chicken
or steak or as a meal in itself with salad.
