Around The World in 12 Dishes- Finland

Hello from Finland!

We arrived here during our Around The World in 12 Dishes journey.  It was quite interesting to find out that there are so many similar dishes to Estonia. So we chose the ones  that we had been cooked many times before :)

Firstly our favourtite salad Rossoli (we call it rosolje).

All you need is: 2 pickled red beets, 2-3 carrots, 2 potatoes, 2 gherkins, 1  apple, 1  onion and a hard boiled egg for decoration.

All you do is: Boil carrots and potatoes with their skin still on and peel them while still hot. Peel the apple. Chop each ingredient into regular small cubes.

Mix in the sour cream.  Decorate the salad with hard boiled egg slices. I forgot to do that but it adds a cute twist.

And now- Whisked Berry Porridege.

For me it looks more like semolina mousse. Or Mannavaht- as we call it in Estonian :)

All you need is about 500 g berries (I usedcranberries), 2 litres of water, 2 ½ dl sugar, 2 ½ dl semolina.

Bring the water and berries to the boil. Add the sugar and sprinkle the semolina in. Cook on a low heat, stirring from time to time, for about 20 minutes. Let it cool. Whisk the cooled porridge into a light foam with an electric mixer. Serve with cold milk. And if you like you can sprinkle some cinnamon on top. It really is very delicious!

Lil Mermaid was happy to help with the whisking.  She said it was exciting to see how the dark pink  porridge turned into a light pink mousse :)

We also printed out the activity pages and placemat as we always do :)
