Daddy`s Birthday

For Daddy`s  birthday we made a   biscuit cake. It is very popular cake in Estonia.. because it is so tasty and easy to make. And usually it is made with children.

At first you need biscuits. For a first few years in England I used English shortcake, but last year I discovered Latvian biscuits in our corner shop. These are biscuits we use in Estonia as well. So this time we used Latvian ones but shortcake is  fine too.

Soak the biscuits in the coffee or juice and lay  them on the tray. The next layer is either yoghurt, fromage frais, soft cheese or sour cream.. whatever you like best.. We usually use flavoured yoghurts. And then soaked biscuit layer again followed by a tier of yoghurt. Then we add some sliced bananas. On top of  the bananas we put soaked biscuits and a layer of mascarpone cheese. And decorated the cake.

For a birthday present we made a noteboard. It turned out so cute!. I coverd some cardboard with white and patterened paper, decorated some pegs and glued them onto the board. Then Annabel drew daddy (on top), herself (in the middle) and mummy (at the bottom). I think she did a great job as it is quite tricky to draw between the pegs. We are going to make one more board as a birthday present for somebody else, but this time I will ask Annabel to draw a picture on the top (instead of patterned paper).. this way you can see the drawing even when you attach notes to the pegs.

    Ooo jaa.. ta on mul kogu aeg köögis. Kui retsepte valin, siis selle mõttega, et laps ka midagi teha saaks :)

    What a clever girl you are Annabel. That looks a delicious cake and I’m sure Daddy enjoyed eating it. Greedy Daddy!!
    That was a lovely present for Daddy for his birthday. You have drawn Daddy, Mummy and Annabel really well.
